Makes 6 tacos 6 corn tortillas 2 T. sour cream 1 c. leftover mashed potatoes Hot sauce 1/3 c. green onions, chopped fine 6 small handfuls of extra crispy kettle potato chips Heat the tortillas in a non-stick skillet until just beginning to get a little color in spots. Heat potatoes in a small bowl in the microwave. Spread sour cream onto each tortilla. Add about 1/4 cup mashed potato. Drizzle with hot sauce and sprinkle with the green onions. Crunch a handful of potato chips over the top of each taco. Fold the tortilla in half and eat.
